Friend Makin Monday: Favorite Things

tumblr_muqt2pDTxi1rnmtj4o1_500Happy Monday everyone! After spending a glorious weekend enjoying the weather, reality came down and smacked up across the back of our heads with rain and temperature’s in the 40’s Sunday evening… where it stayed/ and continue to stay for the next couple of say… let me just tell you how is it possible in a matter of days that the temperate drops 40 degrees  …. you know someone had the nerve to say something about snow? I mean seriously . This past weekend I took out all the storm windows,  open the doors and the windows and allowed the spring air to flow through the house, and someone had the nerve to say, “we might get some snow on Monday” That is information that they could have kept to themselves. I don’t plan to see anymore snow until the end of November …. at least! Now that I’ve gotten that off of my chest…. let’s get to the questions

If you’ve taken part in FMM then you know the rules. If you’re new, please take a moment to answer this week’s question on your own blog then add your link in the comments here as well as over at  Losing Weight and Having Fun so we can all see your FMM questions and answers.  The idea is to connect with other awesome bloggers so take a moment to post your own FMM post and comment on a couple of other posts. Now it’s time for this week’s topic! his week the questions come to you from Stephanie who blogs over at Athlete at Heart

Favorite Things

1. Favorite color? (be specific… what shade of blue/green/red etc)43127706fd16cf366639a07e7d1e6ca1

My favorite color is pink…. love pink, but I’m also partial to the color blue, it reminds me of my mother, but to be more specific I love Tiffany Blue, I think it’s the perfect blue… it reminds me of warmer summers, the Caribbean and iced drinks…I love this color so much, I have several bottles of this shade in nail polishes, my personal favorite is China Glaze’s “For Audrey”

2. Favorite piece of clothing you own?

Right now I don’t have a favorite item of clothing, it’s rough because I sort of afraid to buy clothing because I want to lose more weight, and my old clothes are sort of frumpy… but one thing that I do buy and enjoy… shoes! I just recently purchased a pair of leopard print sneakers….. YES!

3. Favorite smartphone app?

It really changes depending on my mood, but I was at the cancer center the other day and I was looking for something to do. And I found this Canasta app, I’m playing Canasta all day long.. I have it on my phone AND it I have it on the Kindle, I’m addicted.

4. Favorite city?

I love my city Chicago, it’s not a perfect city by any means, but for me right now it’s exactly what I need it’s really is a big city with a ton of little neighborhood… so you kind of get the small town sensibility. I’ve said it many times, but this is a city that really shines in the summer… so many things to do …so many festivals to go to.

5. Favorite strength training exercise?

One the days that I don’t go to the gym I get on the elliptical machine at home and I use my Sworkit app. And do a lot of the stretching/strength/yoga exercises… I love it and it’s great when you are traveling and don’t have access to a gym… and it’s FREE…you know I love free!

6. Favorite vegetable?

My favorite vegetable’s are broccoli and spinach. I have been known to sit and eat an entire head of raw broccoli…. it’s great… although I wouldn’t say the after effects are all that spectacular.

7. Favorite hair product? (shampoo, styling, conditioner etc)

CaptureI really like Wen hair products, they are a bit expensive but from my perspective it’s worth it. Due to my various medical issues I try to very gentle on my hair and I love Sulfate –Free hair products, but with the massive hair loss that occurred a few weeks ago (yep… you can thank the Multiple Myeloma for that one) I won’t have much hair for a while…which is why I’m emotionally preparing myself to get it all shaved off …. so then I would say my new favorite is gonna be the various (fabulous ) head scarfs I’m gonna be rocking until I am able to grown it back.

8. Favorite animal?

Seriously? My baby girl Tsuki! I think this is the 3rd week that I’ve posted pictures of FMM…I love my Tsuki Monster Smile

Tsuki Collage

9. Favorite superhero?

I have always bee a fan of Wonder Woman! I mean come on people….Princess Diana of Themyscira. When outside her homeland goes incognito, with her secret identity Diana Prince. She is gifted with a wide range of superhuman powers and superior combat and battle skills. She possesses an arsenal of weapons, including the Lasso of Truth. She’s fabulous..

10. Favorite recipe? (share the details with us)

I have lots of favorite recipes, but I am really partial to recipes that are quick and easy; and with the warmer weather coming, turning on the oven is not (and it’s not diet friendly)

Chocolate Peanut Butter No-Bake Dessert

I’m really excited about reading everyone’s responses this week, I always love swapping recipes with people.

Tyra Cooks?…Mexican Crockpot Chicken

Lately I’ve gotten so bored with food… that tends to happen with me because I eat the same foods over  and over until I can no longer stand to look at them. I had some  skinless boneless chicken breast in the freezer that I wanted to use, but with the temperature heating up I really didn’t want to turn on the stove…. here comes to crockpot!

I love my crockpot and I have  love for crockpot meals, maybe because I can throw everything in a pot and come back hours later to a meal ready to eat… The recipe is super easy to make 5 ingredients (even though you see 6… I’ll explain that later)

Recipe type: Dinner

Cuisine: Slow Cooker

Prep time:  5 mins

Cook time:  5 hours (high setting)

Total time:  5 hours 5 mins

Serves: 6

  • 1 can black beans, drained (or pinto beans… depending on YOUR taste)
  • 1 can corn, drained
  • 1 (8 oz.) block cream cheese (I use low-fat)
  • 1 jar salsa
  • 1½ lbs. boneless, skinless chicken breasts
  • 1 package taco seasoning (optional)

  1. Cut the cream cheese into large chunks.
  2. Place all of the ingredients in the slow cooker, and stir to combine.
  3. Set the cooker on LOW and cook for, at least, 5 hours.
  4. Before serving, shred the chicken with two forks, and stir the mixture until it’s well combined.
  5. ENJOY!

This recipe is SUPER adaptable; this is really a basic recipe I’ve seen people add more ingredients and adjust others…. so you every time you make it; it’ll be totally different ,  you can even adjust the time, just make sure that you cook it for at least five hours (you want to make sure that the chicken is completely is done)

Once the done, simply shred the chicken and you ready to chomp. You can use this as a filling for tacos, topping for nachos,  you can plop it on top of rice, or make a taco salad

And this a defiantly a freezer friendly meal (for you singletons out there!

just throw everything in there!

I added all the ingredients into my Loseit! app and out popped this informationCapture

So a couple of things that I observed about this recipe

  • I probably should have drained the beans a little bit more.
  • I initially purchased cheese and sour cream along with my lettuce and tomatoes, but because the creaminess of the chicken, I think I might pass on those
  • My younger brother who is super picky liked it… (he had it over nacho chips)

                 after 5 hours

It might look a little weird, but it was sooo good. And naturally I totally forgot to take pictures once I plated it… we were hungry and wanted to get down to business…

If you have any super easy crockpot meals I would love to try them leave a comment or a link in the comments section

Until Next Time!!
