What I Ate Wednesday: Fruits and Vegetables

So clearly this is not an original thought WIAW was originated from Peas and Crayons  and a lot of other bloggers have started doing it as well; and since I can’t be original and I really like the idea of doing this… I decided to give it whirl as well. This will pretty much be a mish-mash of stuff,  some days I will try a new technique or perhaps I’ll be eating something for the first time … and someday it might be leftover chili…who knows, and I guess that’s part of the fun. When I first started blogging it was to remain accountable with my exercise and food intake, so this is kind of takes me back… Very little of this is planned… but it’s 100% honest…

“Eat your fruits and vegetables.” You’ve likely heard this statement since childhood. Research shows why it is good advice:

  • Healthy diets rich in fruits and vegetables may reduce the risk of cancer and other chronic diseases.
  • Fruits and vegetables also provide essential vitamins and minerals, fiber, and other substances that are important for good health.
  • Most fruits and vegetables are naturally low in fat and calories and are filling.

WIAW Breakfast

Up until the morning of my vacation I was eating oatmeal for breakfast, and I gotta be honest if I eat another bowl of oatmeal I’m gonna hurt somebody, what I really REALLLY want is some damn bacon… and not turkey bacon… full fat pork bacon…. but not today… Today I’m having granola and yogurt….. boring!

I actually made this for breakfast, but I totally forgot that I had to “leave it” for a few hours…

  • 1 banana peeled
  • 3 apricots
  • 2 oranges peeled
  • 150 ml water (a little bit more than 1/2 cup)

Directions:

Place the fruits in the blender . Process until smooth and then add the water. You can add some ice if you want it really cold. Leave it for 1 or 2 hours and then serve it. Enjoy!

Instead of using water, I wanted to used coconut water…

WIAW Snack 

  Sorry I was seriously so hungry I didn’t realize that a photo wasn’t taken until after I scarfed it down… but I had toast with melted cheese on it … totally yum!

WIAW Dinner  Not super high on the color scale, why is dinner always so darn bland looking?

I have been chasing this food truck for weeks… WEEKS… and finally I was in the right place at the right time… indecently it’s was right across the street from where my brother works… they are actually in that location 5 days a week, but my brother swears he’s never seen it (how can you miss a big pink food truck with a giant cupcake on it?) or heard of them.

So based on MyFitnessPal and WW I did pretty good… guess when you eat lots of fruit and veggies you can eat more of other things….

I should probably also note that I was also able to eat a little bit more today because I “earned” 9 additional WW points and 841 calories from exercise!

waterAnother thing that I am actively working on is drinking more water…at this point I can hear the water swishing around in my tummy

 

I’m so excited… I have been seriously craving tuna… so I found this great recipe for tuna casserole that I’m gonna try next week

What I Ate Wednesday : Nothing Special

When I first started blogging it was to remain accountable with my exercise and food intake, so this is kind of takes me back… Very little of this is planned… but it’s 100% honest…

WIAW BreakfastSo I read this article about the benefits for eating oatmeal in the morning, I gotta say it makes me full without making me feel bloated and that’s an added plus, especially on the days when I’m going to the gym. Benefits include:

  1. Low calorie food; stops cravings.
  2. Provides high levels of fiber, low levels of fat, and high levels of protein
  3. Stabilizes blood sugar
  4. Enhances immune response to disease.

WIAW Lunchlunch was nothing special, just a brat (which was tad bit salty)  with some mustard, with some chips… like I said … nothing fancy.

WIAW Dinner

Ever have one of those days when you’re hungry and don’t want to cook? Yep, me too ! Thank goodness for grills and microwaves…

I also tried something different spinach soufflé, it wasn’t’ bad but it I couldn’t get with the texture of it… but at least my dinner was colorful…. plus it was nice to have some sweet potatoes…yumm!

DSC02732I will say this past week I have been going to bed super early, so my meals times are seriously altered, must have something to do with me getting back into the gym and working out, so far I’ve run two 5k’s this week, with plans to do another one this Friday…

But any who….  here is my caloric intake for today….
