1. What is your favorite food dish? Macaroni and Cheese, honestly I don’t think there is a way that you can mess it up (well you could over cook the noodles) but any Mac and Cheese is good Mac and Cheese!

2. What is your favorite food type (Italian, Mexican, etc)? Mexican food

3. What is your favorite snack? Microwave popcorn

 

4. What do you usually eat for breakfast? This week I’ve been having this fantastic smoothie

5. Do you eat your veggies?  What are your favorites? I do, and usually by breakfast I have my 5 a day in. I really love spinach, and broccoli (but have to limit those due to being on a bood thinner) carrots have been my go-to veggies (raw not cooked) that are easily portable and I often have a bag with me when I’m going on. I’ve been eating a lot of okra lately as well.

 

6. What is your favorite junk food/guilty pleasure? Chinese food

7. Do you cook most/all of your own food? I do because not only is it saving me money, but I know exactly what I’m eating and so it’s easier for me to calculate my Weight Watchers points. I also pre-make my dinners at the beginning of the week so there is no guessing on what’s for dinner, on a really successful well, all of my meals are planned out.

8. Are you vegetarian or vegan?  If not, have you ever considered or tried it?  No

 

9. If you eat meat, do you eat red meat, and if you do, how do you like it cooked? I eat a lot of chicken, turkey and fish, I’ve never really been a big fan of beef. I’ll eat it any way except for deep fried (and man do I miss it)

10. Is there a food or a dish that you have always wanted to try and is there a reason you haven’t tried it yet? I have never really been a fan of seafood, and a month ago I tried crab for the first time, and shocking I really enjoyed it (I actually think it was around the time that I tried sushi for the first time as well, and I really liked that as well)

Don’t you just love the summer? I always say that Chicago is at it’s absolute best in the summer. Festivals, block parties, concerts, and Fairs…Although we don’t have county fairs we do have State Fairs, which are fantastic, I didn’t make it to the Illinois State Fair, but I do go to the Wisconsin State Fair (I’m a Wisconsin girl, plus it’s closer) Why am I mentioning fairs? Because this month’s theme is “Fun at the County Fair” And of course I got to see the exhibits, and the animals, but more than anything I’m there for the food

I hooked up with Love With Food after the Goodies Box ended (I was getting box the regular and the Kids box… no judging, I like my snacks!) and they referred me over to LWF. I like the idea of learning about new products that I normally wouldn’t have known about. And I especially love that a with each purchase of a LWF box 1 meal is donated (two meals when you get order the deluxe box) Recently Love With Food Introduced a Gluten Free Box that has about 8-12 snacks per month; it costs $25  

The very first thing that I noticed when I opened the box is that they redesigned their information card…. well I guess it’s no longer a card, it’s actually a pamphlet  that give more detailed information about the products and the companyCollage

 

DSC03047Montreal Steak Spice Seasoning Potato Chips When I first saw the bags I was a little iffy, I’m not a big plan of Barbeque flavor, but they certainly did taste exactly what they mean to.. steak spice on potato chips. honestly they were too bad I would have preferred that they used a little bit less spice, because after a while thy get really salty and at the end of eating a big I felt like my mouth was burning….Honestly I felt like if I wanted to have this experience again I could recreate it myself…The bags that I got were 1.25 ounces. These are Glutton-free, and you can get a case of 13 bags for about $45.00.  each bag (36g) is 180 calories

 

Pineapple+Coconut Fruit Ice This product certainly seems targeted toward children, when I got ready to review it I realized that it need to be frozen… duh!!! This products is available on AmazoDSC03039n as well as Whole Foods and well as other Natural/Whole Grocery chains This product is verified non-GMO, Vegetarian and Glutton Free , each Smooze is around 70 calories and comes in a 65ml package.

 

 

 

DSC03040Cinnamon Grahams If you frequently fly on Jet Blue then you probably recognize this product. These squirrel shaped snacks are completely nut free (hence the name). I received two 1oz packages, but it also comes in a larger 10oz boxes. The website has a store locator to find a store closest to you, but you can by this product # 10oz boxes ) from Amazon, but apparently at this time this product is sold out. This product is whole grain with no fructose corn syrup and this product is about 130 calories per serving.

 

 

Salt Water Taffy I received both the Salty Peanut and the Salty Carmel Apple taffy. Salty Road makes six different flavors which include; Peppermint, Sea Salt Carmel (yum!), Vanilla  and Bergamot. The box comes in DSC030463.5 oz  boxes there are retailers in most major cities as well as Canada and England, but you can also buy this product from stores like Dean and Deluca and Treatsie . The only issue that I had with the candy is that it’s in the traditional wax paper and isn’t not marked which flavor you are eating and they all look the same so it really is a surprise what you’re getting. Each box weigh’’s 3.5oz

 

 

 

DSC03041Nutty Rice Bites with Blueberries  Comes in a 1.25oz bag and retails for about $1.49. You can get a 10% discount when you purchase a case of 10. I actually crunched this up and ate it worth my yogurt… it was fantastic! Each bag is 70 calories, so it’s the perfect low calorie treat

 

 

 

 

 

Crispy Cheddar Crackers these crackers have no cholesterol, no hydrogenated oils, preservatives or flavors. These remind me of the regular  cheddar crackers that I eat. The package that I received are DSC03043 1oz bags and you can buy this product in bulk at Amazon and there is a whole wheat variety as well… taking a page from Love With Food, I crunched these up and up them on top of my taco soup (I ran out of corn chips) Super YUM!!! Each bag (28g) is 130 calories

 

 

 

DSC03042Kettle Sweet Peanuts As far as I’m concerned you can never go wrong with nuts, these are a combination of salty and sweet, but these are gonna be used for the recipe for the cookies. Each bag is roughly 1.5oz and 140 calories. These can be purchased directly from the Love With Food website for 8 packages for $12.99

 

 

 

Lollipops You can get over 40 lollipops for 7.99 these are perfect if you have little ones, or a sweet tooth like me…these a perfect for you. I saw them in the box and stuck them in my purse cause you never know DSC03045when a sweet tooth is gonna strike you.

DSC03044Redwood Smoky BBQ Multigrain Chips These are, Gluten Free, Non-GMO and Vegan. When you think of healthy stuff you think of brown rice, Quinoa, Chia and Flax seeds… plus Garbanzo and all sorts of other things… I gave them to my younger brother and he said, “they aren’t bad” from him that’s high praise.. this products comes in 1.5oz and 6oz bags with calories of 140 for one serving.

 

 

 

Nut Butters My box included honey peanut better and chocolate hazelnut butter. It varies in calories based on the butter you receive, they come in several different varieties, so I’m sure there is something for everyone.DSC03038plus they have peanut butter cups! SCORE. This product comes in an 80 calories squeeze pack, 1.15oz squeeze pack and the traditional 16oz jar.

Coupons were a little thin this month, I only got one from Skeeter Nut Free for $1 off (if I purchase through Amazon) . I think my favorites from this box were the crispy cheddar crackers and the nut butters. Overall all I would give this box a 9 out of 10, but the products were great but I think they were reaching a but far trying to make them fit the theme. I’m looking forward to what they send next month

BLUE RIBBON CHOCOLATE PEANUT COOKIES (No Bake)

Ingredients:

  • 2 cups of Sugar
  • 1/4 cup Butter
  • 1/3 cup Cocoa Powder
  • 1/2 cup Whole Milk
  • 1/2 cup Chopped Kettle Sweet Peanuts
  • 1/2 tsp. Salt
  • 1/2 tsp. Vanilla
  • 3 cups Quick Oats

Method:

  1. Combine sugar, butter. cocoa and milk in s medium pot. Cook over medium eat, stirring, until smooth. Bring to a boil and let simmer for 2 minutes.
  2. Remove cocoa mixture from the heat and ass peanut butter, salt and vanilla. Stir until smooth.
  3. Fold in oatmeal and peanuts. Stir until coated. Let the mixture in pot for 1 minute
  4. Using a spoon, scoop the batter onto parchment paper or wax paper. The cookies can be any size that you like. Leave on your kitchen counter for a few hours to cool and enjoy.

Tyra Cooks?… Taco Soup

Recipe type: Soup

Cuisine: Mexican

Prep time:  15 minutes taco soup

Cook time: 6 hours

Total time:  6 hours 15 minutes

Serves:   around 16

Naturally when I see a recipe and I think it looks like something I would like to try I instantly start devising ways to make it better (well not better, but tailor it to me) and that’s exactly what I did with this recipe.

The original recipe caloric content comes in at 391 calories and my version comes in  slightly lower  with 376 calories. To be fair both recipes were calculated the same way and original soupthe only optional ingredient included are the black olives. Obviously your nutritional values will change based on the brands and products that you use for your recipe.

Instructions

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. DSC03015

Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix DSC03017

cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. DSC03019

Top with whatever toppings you like SmileIn the end I didn’t use the corn chips (forgot to get them from the grocery store) and didn’t use the onions or pickled jalapeno’s as garnish, just a bit of shredded cheese and sour cream

 

In end I was able to fill these container with the soup, so one goes in the fridge and one goes into the freezer

Friend Makin’ Mondays: Veggies

So since last week ‘I took a self imposed hiatus I’m back and decided to do last weeks FMM since I missed it

Not You Average House CatBut let’s get to mountain and molehills first. Mountain: Although I spent a lot of time sleeping, I did rustle up the courage to go back to the zoo… did lots of walking (and although my body seriously paid for it, I got a chance to spend some time with my little cousins…I also did a little bit of redesign on the blog (it wasn’t until after I went to retrieve last weeks FMM that I realize that Sarah and I are are blog twins… we have the same basic layout…. how funny! Molehill: On the flip side things have been hectic, as this is posted I will be sitting on my oncologists office… those appointment last forever (we are usually there for 6 hours)… but sitting there will be a refreshing change from the drama that happened at my20140809_091552 house this weekend. On Friday a pipe burst and  the sump pump malfunctioned and part of the basement was flooded. Then on Saturday my roof was replaced (which we knew about) what I didn’t know was that it was nearly mission impossible to get out of the house… shingles were piled right up against from front and he back doors of the house… such a pain…. but the in the end we got a brand new roof, overhangs, and gutters… and all it took was one day. By the time I got home at 6 the job was complete and the mess was cleaned up.

1. What is your favorite vegetable?

I love spinach…. I’ve always loved it, even as a little girl…my mother used to call me Popeye

2. Is there a vegetable that you really really don’t like?

I was going to say peas, but I can tolerate them. but I refuse to eat cream style corn… I can’t it looks like it was eaten then thrown up again…. totally gross.

3. Do you drink vegetable juices? If so what flavors?

I just recently had beet juice, it wasn’t great; but it wasn’t that bad either… I added it to a a smoothie. I will say that it tasted a bit like dirt… well I shouldn’t say dirt, but it had an earthy after taste.

4. Potatoes – do you count them as a vegetable serving?

French fries and tator tots…nope! If it’s mashed, baked or boiled I count them as a vegetable.

5. How many portions of vegetables do you eat a day?

I try to get at least three a day.

6. if you were making a smoothie would you add vegetables?

See Question # 3. Plus I would defiantly add carrot juice to my smoothie

7. Are you allergic to any vegetables?

Not one that I’ve eaten yet…

8. Do you have a favorite vegetable recipe? Feel free to share the recipe with us.

  We used to eat potatos O’Brien all the time when I was a child, but there’s something more adult when you add cheese to it…. and you know how I feel about cheese.

Ingredients:
  • 1 large pkg Potatoes O’Brien ~Diced potatoes with peppers and onions (in the Freezer Section)
  • 1/2 stick melted butter
  • 2 cans cream of chicken soup, Campbell’s Healthy Request (Or your choice – Cream of Mushroom, Celery, Broccoli)
  • 1-16 oz container of sour cream potatoes-obrien-2
  • 8 oz shredded cheddar cheese

Directions:

  1. Thoroughly mix all ingredients in a large bowl (put the potatoes in right from the freezer).
  2. Put in to a casserole dish and bake at 375° for 55-60 minutes (If you double or triple this you will need to cook longer, potatoes are done when golden and bubbly)

9. Do you grow any veggies in your garden?

Nope, I’m not that gifted

Friend Makin Monday: Favorite Things

After spending a glorious weekend enjoying the weather, reality came down and smacked up across the back of our heads with rain and temperature’s in the 40’s Sunday evening… where it stayed/ and continue to stay for the next couple of say… let me just tell you how is it possible in a matter of days that the temperate drops 40 degrees  …. you know someone had the nerve to say something about snow? I mean seriously . This past weekend I took out all the storm windows,  open the doors and the windows and allowed the spring air to flow through the house, and someone had the nerve to say, “we might get some snow on Monday” That is information that they could have kept to themselves. I don’t plan to see anymore snow until the end of November …. at least! Now that I’ve gotten that off of my chest…. let’s get to the questions

Favorite Things

My favorite color is pink…. love pink, but I’m also partial to the color blue, it reminds me of my mother, but to be more specific I love Tiffany Blue, I think it’s the perfect blue… it reminds me of warmer summers, the Caribbean and iced drinks…I love this color so much, I have several bottles of this shade in nail polishes, my personal favorite is China Glaze’s “For Audrey”

2. Favorite piece of clothing you own?

Right now I don’t have a favorite item of clothing, it’s rough because I sort of afraid to buy clothing because I want to lose more weight, and my old clothes are sort of frumpy… but one thing that I do buy and enjoy… shoes! I just recently purchased a pair of leopard print sneakers….. YES!

3. Favorite smartphone app?

It really changes depending on my mood, but I was at the cancer center the other day and I was looking for something to do. And I found this Canasta app, I’m playing Canasta all day long.. I have it on my phone AND it I have it on the Kindle, I’m addicted.

4. Favorite city?

I love my city Chicago, it’s not a perfect city by any means, but for me right now it’s exactly what I need it’s really is a big city with a ton of little neighborhood… so you kind of get the small town sensibility. I’ve said it many times, but this is a city that really shines in the summer… so many things to do …so many festivals to go to.

5. Favorite strength training exercise?

One the days that I don’t go to the gym I get on the elliptical machine at home and I use my Sworkit app. And do a lot of the stretching/strength/yoga exercises… I love it and it’s great when you are traveling and don’t have access to a gym… and it’s FREE…you know I love free!

6. Favorite vegetable?

My favorite vegetable’s are broccoli and spinach. I have been known to sit and eat an entire head of raw broccoli…. it’s great… although I wouldn’t say the after effects are all that spectacular.

7. Favorite hair product? (shampoo, styling, conditioner etc)

CaptureI really like Wen hair products, they are a bit expensive but from my perspective it’s worth it. Due to my various medical issues I try to very gentle on my hair and I love Sulfate –Free hair products, but with the massive hair loss that occurred a few weeks ago (yep… you can thank the Multiple Myeloma for that one) I won’t have much hair for a while…which is why I’m emotionally preparing myself to get it all shaved off …. so then I would say my new favorite is gonna be the various (fabulous ) head scarfs I’m gonna be rocking until I am able to grown it back.

 

 

 

 

 

 

 

8. Favorite animal?

Seriously? My baby girl Tsuki! I think this is the 3rd week that I’ve posted pictures of FMM…I love my Tsuki Monster Smile

9. Favorite superhero?

I have always bee a fan of Wonder Woman! I mean come on people….Princess Diana of Themyscira. When outside her homeland goes incognito, with her secret identity Diana Prince. She is gifted with a wide range of superhuman powers and superior combat and battle skills. She possesses an arsenal of weapons, including the Lasso of Truth. She’s fabulous..

10. Favorite recipe? (share the details with us)

I have lots of favorite recipes, but I am really partial to recipes that are quick and easy; and with the warmer weather coming, turning on the oven is not (and it’s not diet friendly)
