Pistachio Cake

A few years ago a co-worker of my mother brought this cake to a holiday party, my brought a few slices home and we all loved it, so I asked her to get the recipe, ever since then this has been a staple of our for the holidays. But it’s such a good, light treat it really shouldn’t be limited to just the holiday season.
- 1 (18.25 ounce) package yellow cake mix
- 4 eggs
- 1/4 cup vegetable oil
- 2 tablespoons water
- 1 (3 ounce) package instant pistachio pudding mix
- 1 cup Chopped Walnuts
- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan (I prefer to use a Bundt cake pan)
- In a large bowl, combine the first five ingredients; beat on low speed 30 seconds. Beat on medium 2 minutes. Fold in walnuts. Transfer to prepared pan. Bake 40-45 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.
I love this recipes it’s so quick and easy and it’s a perfect recipe for a novice baker. Another thing is that this recipe is customizable… if nuts aren’t you’re thing you can eliminate them, you can add icing if you like, some people opt to add a bit of sugar to make it a little but sweeter and some people add a bit of food coloring to give it a strong green color, but like I said I like to keep things simple and quick and I love recipes that are easy to remember.
For those you who would prefer frosting….
- 1 package (3.4 ounces) instant pistachio pudding mix
- 1 cup 2% milk
- 1 carton (8 ounces) frozen whipped topping, thawed
This recipe yields 12 slices… and my version of the recipe is roughly 151 calories

This looks so good – my mom used to make one like this when I was young and I loved it. She hasn’t made it in years, so maybe I need to make this and bring it to her for a surprise.
